What will I learn?
Chinese Cuisine
The full 3 week intensive Chinese cooking course will include lessons such as
Knife Skills
How to use a Chinese cleaver for everything, from fine dicing and mincing to filleting fish and preparing meat and vegetables

Market Tours
Located right by the sea, it’s obvious that we will visit the local fish and produce markets at times. You will learn what to buy and learn more Chinese ingredients.

Handmade noodles such as Biang Biang and handcut will be taught, along with regional favourites such as “Cat Ear” & Zhaijang noodles.

Dumplings
From Har Gow to Baozi, various types of Chinese dumplings are covered. Learn to make your own wrappers and prepare many types of fillings.

Stirfry
The base of many Chinese dishes, wok class will be held daily with a wide range of stir fry dishes from across China.
Meet Mr Zhou
In 2006, I set up one of the first cookings schools for tourists in Beijing. You might know me from there- we were called “Hutong Cooking School”.
I love teaching foreigners and decided to set up the intensive cooking school in Guangdong because cooking by the sea is better for fresh seafood and produce. Also, the weather is much nicer for the students!
I wanted to create a course for professional chefs to better learn Chinese cooking and to help expand their knowledge on Chinese cuisine. Many of my students have been private chefs, yacht chefs, small restaurant owners, and really passionate foodies who cook for pleasure.
For this reason, I have created the menus around popular Chinese dishes for foreigners while focussing on traditional recipes and cooking styles. All of the dishes use locally sourced ingredients where possible and fresh meat and seafood daily. If the intensive course still isn’t enough for you- ask me about private tuition!

The Classroom
Huizhou is famous for being a lovely costal city in China, located just a few hours from Hong Kong and Shenzhen. We are based on the 15th floor, offering sweeping views of the coastline while you prepare your dishes.

Where in China is the course?
We are based in Huizhou, Guangdong Province. The closest airport is Huizhou, however, if you are flying from Europe or the US, you might find a flight to Hong Kong or Shenzhen is better. From Hong Kong we are only a few hours by fast train.
Do I need to bring anything? What about my own knives?
You do not need to bring your knives, or anything specific for the course. I provide everything- even the cleavers! Make sure you bring comfortable shoes and clothes to cook in. And since we are located on the coast, you may want to bring beach attire for your downtime.
How many students are in the class?
To ensure students get the best knowledge and time in the classroom, we have limited the classes to just 4 students. This keeps learning more enjoyable and on task, and helps me teach you more in a shorter time frame. A small group of students allows us to chat and answer questions as they arise and ensure you are learning as best as possible.
Where can I stay?
Because the school is located in a tourist area there are plenty of hotel options. If you want to book your own hotel, many of these can be booked through Agoda or booking.com. I also have some apartments available for you to book during your course, they all come with sea views, air conditioning and are just a short 5-7 minute walk to the classroom. Is China easy to travel?
Visa’s used to be difficult, but now, many countries can receive a free visa on arrival in China for stays up to one month! Once you arrive into China, travelling around is very easy (and cheap!) we have many fast trains linking cities across the country, so you can easily combine your studies with a holiday in China afterwards. I can send you details on apps to download before you arrive, but so long as you have an ESIM or a VPN, travelling in China shouldn’t be any more difficult than travelling anywhere else in the world!
